Red leaf Shiso, the classic japanese tart herb, adds a surprising twist to a top tier sencha. Shiso's refreshing tartness brings to mind the refreshing uneboshi (pickled plum) taste one encounters when they bite into a moist rice cake wrapped in nori. One of Japan's most enduring flavors really makes for an incredibly tasty green tea blend and a refreshing summer cooler.

Hot Tea:
- Boil water and let cool to 176F/80C
- Steep for 2 minutes (longer=stronger)
- Use approx. 1 tsp per cup
- To re-infuse use higher temperature/less time

Iced Tea:
- Pour 1 1/4 cups boiled water on 5 tsps of tea
- Steep for 3-5 minutes
- Pour into pitcher while straining leaves.
- For a quart of tea add ice & top w/cold water
- Garnish and sweeten to taste
